Epic Win Cupcakes

Valentine’s Day is tomorrow. If you haven’t yet picked out a gift for your loved one(s), or are looking for a sweet treat for yourself, I’d recommend you check out these “Epic Win Cupcakes.” The cupcakes include a trifecta of ingredients: coffee, whiskey, and bacon. (Not into pork products on your baked goods? Feel free to keep it off.) Between the kick of the whiskey and the caffeine from the coffee, these cupcakes are not for the faint of heart. They’re guaranteed to make an all-night gaming session or movie marathon even better.

Chocolate-Coffee Cake
(Recipe adapted from Better Homes and Gardens New Cook Book’s “One-Bowl Chocolate Cake”)

Ingredients:

  • 2 TBS instant coffee powder
  • 3/4 cup milk
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup cooking oil
  • 1 tsp vanilla
  • 1 egg
  • 4 slices of bacon, cooked, broken into small pieces (optional)

Directions:

Preheat oven to 350 degrees and prepare cupcake pans with wrappers.

In a small bowl, mix the instant coffee powder into the milk. Set aside.

Mix together the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Add milk/coffee mixture, oil, and vanilla.

Beat with electric mixer on low speed until combined, then mix on medium speed for 2 minutes. Add egg, and beat for 2 minutes more.

Pour cupcake mixture into cupcake pans, filling them up 1/2 way.

Bake for 22 minutes or until toothpick inserted comes out clean.

Let cool, frost and top with a piece of well-cooked bacon. Enjoy!

Chocolate Whiskey Buttercream Frosting

Ingredients:

  • 8 TBS unsalted butter
  • 3-4 cups powdered sugar
  • 3 TBS whiskey (I used Mischief whiskey, made locally in Fremont!)
  • 3 tsp cocoa powder
  • dash of salt

Directions:

Taste the whiskey, make sure it’s good.

Pour another 3 TBS of whiskey to actually use for the recipe.

In an electric mixer, whip butter until fluffy.

Add in 3-4 cups powdered sugar, 3 TBS whiskey, 3 tsp cocoa powder, and a pinch of salt slowly as you mix.

Continue to mix until the frosting takes on the consistency you prefer, adding more powdered sugar if necessary.

I took these cupcakes with me when I joined BJ Shea’s Geek Nation podcast to talk about Valentine’s Day gifts. You can check out the full podcast here. My segment starts about 15 minutes in.

Above all, remember that Valentine’s Day is just a great excuse to tell people you care about them–that can be done with something homemade, a nice hand-written letter, or even just an earnest phone call. You don’t need to spend any money as long as there’s some thought there.

What are you doing for your Valentine?

Sleep With Your Food

Etsy seller B Fiber and Craft Emporium has created some AMAZING ways to incorporate your favorite food into your everyday life. Why eat a slice of pizza when you can sleep in one? Why enjoy a slice of bacon when you can wear it around your neck?

Take a look at some of my favorite items they offer:

Pizza Sleeping Bag

The pizza sleeping bag can be ordered with optional pillow toppings. Seriously. $250.

Baked Potato Bean Bag Chair with Butter Pillow

Starchy and comfortable! $150.

Waffle and Syrup Sheets

Have breakfast in bed every day! (Sorry, I couldn’t resist.) Optional fruit pillows available. $150.

Bacon Scarf

The men (and pork-product loving ladies) will find me irresistible in this bacon scarf. $40.

Bravo to someone who finally allows me to play with my food. What food item would you like to see next? It comes as a surprise to no-one that I’m holding out for a cupcake beanbag chair.

Rainbow Bacon

You’re making brunch for your friends, and you’re having bacon (of course). But this time, you want something just a little bit different…

How about some rainbow bacon?

Sure to wake up your friends (and make them question your sanity), this rainbow bacon may just ensure that you get as many pieces as you want to yourself!

It seems that the person who made this bacon individually soaked raw pieces into food coloring, and then pan fried it.

Would you try this? If you do, send some pics/video my way and I’ll post them. This may be one of the few activities I’m too chicken to try myself.

*Rainbow bacon may also work well for St. Patrick’s Day, Valentine’s Day, or Fourth of July. No better way to celebrate America than by dying fatty food to match our flag! God bless our country.

Bacon Mocha Latte, Anyone?

Torani, makers of flavored syrups used in coffee shops and bars everywhere, has a new flavor to add to the collection:

Bacon.

An extremely trendy flavor, bacon syrup can be used for many things. Although it may seem gross at first (Bacon coffee, really?), this syrup’s uses don’t need to stop at coffee and alcoholic beverages.

Consider putting a bit in a carbonera or marinara sauce for a low-fat (and vegetarian) option. Try adding just a hint into your dark chocolate brownie batter. Add a little bit to chocolate chip pancakes for a delicious alternative to pigs in a blanket.

And if you really want to try a bacon beverage, give this one a try (courtesy of Torani).

Bacon Bourbon Sour

INGREDIENTS
1 oz. Torani Bacon Syrup
1 oz. fresh lemon juice
2 oz. bourbon
3 inch bacon strip (garnish)

INSTRUCTIONS
Combine syrup, lemon juice and bourbon in a cocktail shaker with ice. Shake well and strain into an old-fashioned glass. Garnish by placing a small strip of cooked bacon across the rim of the glass.
